Das Naturhotel Chesa Valisa, Kleinwalsertal, AustriaThe Naturhotel Chesa Valisa is a restored 500 year old traditional Walser chalet extended with cutting edge Vorarlberg architecture. A small chalet outbuilding hides the Biomass plant that heats all the hotel’s hot water and the solar panels are hidden on the walls of the extension. All the food in the hotel is organic and all drinks have an organic option. All building materials are natural – there is no concrete for example. All beauty or cleaning products used in the rooms or spa are organic and all linens and fabrics are made from organic cotton. Bicycles are provided in summer and events arranged for the whole community (not just guests) that showcase local food or products. They support the local farming co-operative purchasing local produce and are family run and owned. This is an interesting example of a 4 star luxury hotel that has seemlessly integrated good practice throughout the hotel demonstrating how it can lead to a compelling customer offering.

Les Tables de la Ferme, Villard le Lans, FranceLes Tables de la Ferme is a weekend only ‘pop-up’ style restaurant run by a couple on their farm in the village. The restaurant is only open for Saturday night and Sunday lunch and has a single menu for the whole weekend that is published in advance. They utilise their own farm products and those of all the farmers in the region showcasing local produce in innovative ways. It works for both visitors and locals since the menu is always changing and reflects the seasons. They also sell some of their products direct and sell the same meals to take away. As it is reservation in advance only – it is manageable, allows planning and no waste and a thoroughly local, seasonal experience.
